I have cooked, peeled, seeded, and stored/frozen four pumpkins and have made two full baking sheets worth of pumpkin seeds, some for snacking and some for sprinkling on salads. But, woe is me, I still have more pumpkins to deal with.
When my job at the corn maze came to it's end, all the workers were told to grab as many pumpkins from in front of the concession stand as we could possibly carry. Rather than have to carry them, the owners of the farm that the corn maze is on preferred that the workers take them home. (The pumpkin patch still had plenty of pumpkins for the farm to use.) So, I scooped up as many as I could (four) and was careful to choose only "sugar" pumpkins, which are the best for cooking and baking. We were urged to take more, so I did. One of the bosses carried a few more over to my car and placed them in the trunk.
Ok, so I started dealing with the pumpkins. I made pumpkin soup to start with and then, on another day, I made some pumpkin muffins. As I said earlier, I've cooked and frozen four pumpkins for future use. But, guess how many pumpkins I have left? Six! 6! Six!
I'll be cooking and freezing more, that's for sure, and I plan to do some tomorrow. Because I'll have a fairly good amount of freshly cooked pumpkin, I already plan to keep some aside to put together a nice dessert for our next meal. I won't mind all the work I'll be doing once I sit down and reward myself with a slice of pumpkin roll cake!
